Lamian Noodles takes no soup out of the pot, cuts it into short strips with a knife, and pours it into a mixed vegetable pot made of vermicelli, minced meat, peppers and a small amount of vegetables. The cooking before cooking is equivalent to that in Lamian Noodles, and the mixed frying method after cooking is similar to that of fried noodles, but the taste is different from both. First long and then short, first boiled and then fried, and mixed with noodles and vegetables. Confucius soup rice with firecrackers not only has the fragrance of beef soup noodles of Hui people in Shaanxi, Gansu, Ningxia and Bajiang, but also combines the advantages of smooth and refined noodles of Uygur people. Therefore, the older generation of Hui people in Xinjiang invented such a kind of firecrackers rice that is sour, spicy, refreshing and appetizing, which makes the Han, Hui and Uygur people feel like a family.
