Li Chunmao Cold Noodles Li Chunmao Cold Noodles. Li Chunmao, a citizen of Shanghe Street, the county seat, inherited his ancestral rolling skill and specializes in cold noodles. Li makes cold noodles by hand, and it is processed by many processes. The noodles are as thin as vermicelli, with excellent elasticity, smooth, refreshing and unique seasoning, which is praised by customers from south to north. Only about fifteen or six kilograms of noodles are produced every day, and customers are crowded in cold and hot weather. In 1920-1930, Chen Chunsheng and Hu Da copied it and became quite famous. According to Li's regular customers, Chen and Hu's cold noodles were inferior to Li Chunmao's cold noodles. Chen Chunsheng later became a first-class chef in Baihe.
