Baihe papaya wine is a specialty of Baihe County, Ankang City, Shaanxi Province. Baihe papaya wine is a fruit wine made from the first-class fresh papaya produced locally, which is fermented twice at low temperature. It absorbs and retains the useful ingredients in the fresh papaya to the maximum extent, making it unique and sour, refreshing, mellow and sweet, and lasting in fruity flavor. Baihe County has unique natural resources-rich natural mountain spring water and pure atmospheric environment. The papaya wine produced not only has the unique functional components of ginsenoside in papaya, but also is rich in amino acids, vitamins and various natural minerals. According to the identification, Baihe papaya contains more than 17 kinds of amino acids and various nutrients, especially superoxide dismutase (SOD), which is 300 times as high as raisins, which is incomparable to other fruits in the world at present. Baihe Yijiu Winery is a restructuring of Baihe County Winery, a subsidiary of Baihe County Economic and Trade Bureau. It is an individual contracted private enterprise, mainly producing and selling "Yijie" papaya wine and sugarcane wine, with an annual production scale of 3,000 tons. Since it was put on the market, it has been favored by consumers and won many awards. In July, 2003, it was recognized by China Food Industry Association as "national food with comprehensive quality, hygiene and safety standards". At present, Baiyi papaya wine has become a household name in Ankang City and its surrounding areas, which can be described as "famous in jinzhou area".
