The astringent persimmons are divided into Niuxin persimmons (commonly known as water persimmons, crisp persimmons and hard persimmons) and surrounding persimmons (commonly known as red persimmons and soft persimmons). The island produces mainly astringent persimmons, and the astringent persimmon pulp is easy to have astringent taste when eaten because it contains tannin, so it needs to be astringent. Persimmon is soft, water persimmon is crispy, tastes different, but the sweetness is equivalent, but the market price of water persimmon is 2~3 times that of red persimmon. When choosing water persimmon, it is advisable to choose the one with huge fruit shape, rounded bottom, complete appearance, no fruit fly bite and golden skin and pulp, especially the one with the highest sweetness within one month after Mid-Autumn Festival; The selection method of red persimmon is roughly the same, only the inside and outside of the fruit color can be changed to saturated orange red. Persimmons can be processed into dried persimmons in addition to fresh food. It is said that the persimmon cream on dried persimmons can promote fluid production, eliminate phlegm, nourish trachea and be used as Chinese herbal medicine.
