Name of the dish: assorted black ginseng main ingredients: 500g of well-made black ginseng, 75g of diced chicken, 75g of diced gizzard, 75g of crab meat, 75g of diced fresh mushrooms, 50g of fresh lotus, 50g of diced bamboo shoots, 25g of scallops, 20g of diced ham, 20g of Shaoxing wine, 2 strips of ginger, 200g of spareribs and 15g of soy sauce. Method 1: First, cut the inner surface of the whole piece of black stone ginseng with a knife, with a distance of 1 cm per knife, and the cutting depth of the knife is about half of the thickness of black stone ginseng. 2. Put 750g (1kg and a half) of clear water in a wok, add 15g (3 yuan) of Shaoxing wine, 10g (2 yuan) of soy sauce, 1 slice of ginger and 1 strip of raw onion, and roll with the sea cucumber for 3 minutes, then pick up the sea cucumber and put it in a bowl. Pour out the ginger and onion water in the wok, and then roll with clear water, ribs and ham skin to pick it up. Wash the scallops, put them in a small bowl, add 50g (1 liang) of soup, steam them in a steamer for 20min, and take them out for later use. 3. Boil the boiled water in wok, mix the diced chicken and diced diced pork with wet raw powder, put them into boiling water, then soak the fresh mushrooms, fresh lotus, diced bamboo shoots, diced ham and crab meat together, pour them into the strainer, take the sea cucumber out of the steamer, pick up the ginger, onion, sparerib and ham skin, and pour out the original sea cucumber soup in the bowl. 4. Put 1000g (2kg) of soup in a clean wok, and add 5g of monosodium glutamate (1 yuan), 4g of refined salt (8 points) and 5g of soy sauce (1 yuan). Roll the soup slightly to remove the foam, add a little pepper, and after seasoning, take up the buckle bowl of sea cucumber, and pour the soup into the sea cucumber after seeing the whole sea cucumber facing upwards.
