Whitebait is a freshwater fish, known as the first handsome fish in Asia, named after its slightly round body length, delicate and transparent color, such as silver. Lushan West Sea is a natural breeding base for whitebait, with superior ecological environment, wide water surface, excellent water quality and abundant shallow water plants. The whitebait in the West Sea of Lushan Mountain was introduced from Taihu Lake. It is a high-protein and low-fat food with fine meat, white and tender, no scales, no thorns, no bones, no intestines and no fishy smell. It is rich in protein and amino acids, and is known as "ginseng in water". The whitebait in the West Sea of Lushan Mountain is sweet and flat in taste, invigorating the spleen and stomach, moistening the lungs and promoting diuresis, which has a certain dietotherapy effect on spleen and stomach weakness, lung deficiency cough and fatigue. The annual output of whitebait in the West Sea of Lushan Mountain can reach 4 million kilograms. The chilled whitebait is mainly exported to Japan, South Korea and Southeast Asia. After exposure, the dried whitebait has the same color, fragrance, taste and shape, which is beneficial to storage.
