Li Xian cake introduction: Raw material formula (product 100 kg): 100-120 kg of plum blank, 52-51 kg of sugar, 200 g of saccharin, 200-300 g of spiced powder, and 3 kg of licorice. There are two ways to process the plum blank (dried plum): one is to divide everything into two pieces by a disc machine, and add 5 kg of salt (powder) to 100 kg of plum. The other is to mix plant ash and Li in a blender for 5 minutes, wash them with water, and then marinate them with salt for one month. Process flow: selecting fruits (the size is separated, the diameter is larger than 20 mm, and the size is smaller below) → pickling (adding 5 kg of salt to 100 kg of plum twice, and pickling for one month) → bleaching (changing water for 1-2 times for 16 hours until the salt content is 6-8%) → drying (7-80% dry) → soaking sugar for the first time (Pomei). Then add the soaked sugar water, adjust it to Baume 10, and then soak the plums for 2 ~ 3 days) → the third sugar soaking (concentrate the second sugar water to 15 ~ 20 for 4 ~ 5 days) → the fourth sugar soaking (adjust the third sugar water to 26 ~ 28 for 4 ~ 5 days) → the fifth sugar soaking (add saccharin). Sensory index: color: brown or dark brown, shiny. Description: oblate, nucleated, unbreakable. The nucleus does not show up obviously, and the appearance is wrinkled and semi-moist, with a diameter of more than 20 mm. Tissue: Absorbing sugar through the heart, the tissue is full, moist and slightly soft, and there is no sand feeling when eating. Taste: salty, sour, sweet and palatable, with the flavor of Chinese medicine and this variety. Physical and chemical indexes: total sugar 51-61%, total acid 0.7-1.2%, salt 3.5-5.5%, moisture 21-29%. Microbiological indicators: no pathogenic bacteria, fermentation, souring, mildew and other phenomena caused by microorganisms. Shelf life: 6 months. Within 6 months, sand returning, fermentation, souring, mildew, insects and deterioration are not allowed.
