Baoyu's fish lips are characterized by toughness but not hardness, hot and sour and refreshing. Fuding folks use the skin of sharks (including white paste sharks, young sharks, sharks, sword sharks, Jin visits, etc.) instead of fish lips. The "fish lips" dishes cooked with shark skin are difficult to distinguish between Baoyu Zhen and Jia in A Dream of Red Mansions. Therefore, it is called "Baoyu Fish Lip".
