Jinhu whitebait

Jinhu whitebait is a specialty of Taining County, Sanming City, Fujian Province. Jinhu whitebait is delicious, white as jade, clear and transparent. "Fried Eggs with Whitebait" is a unique local flavor dish in Taining. Whitebait is a kind of lake freshwater fish with high economic value. In April, 1986, it transplanted 160,000 fertilized eggs of whitebait from Taihu Lake and put them into Dajin Lake for breeding. After five years of transplanting, it was successful. It became the first valley reservoir in China, which filled the gap in Fujian and ended the history of no whitebait in Fujian's freshwater waters.
