Maxiang amphioxus is a specialty of Maxiang Town, Xiang 'an District, Xiamen City, Fujian Province. Amphioxus is extremely nutritious, and it is a delicacy on the banquet table. It can be served as a dish and made into fish crisp, which is fresh and delicious, and its dried products are precious seafood. Amphioxus is abundant in the waters around Crocodile Island in Qiongtou Village, Maxiang Town. According to historical records, it was discovered in the 14th year of Tang Yuanhe (819) when Han Yu, the secretariat of Chaozhou, killed crocodiles, and some people were fishing, but the quantity was small. The mass production was from 1945 to 1956, with an annual output of 1,000 tons. Amphioxus is 3-5 cm long, and its sides are flat and cut at both ends, so it is called "gun load". He has no head, no eyes, no ears, no nose, no fin scales and no spine, so there is a local saying: "Amphioxus has no nose and no eyes-it doesn't know the current affairs." Its nutrition is extremely high, containing 70% protein, a variety of inorganic salts, especially high iodine content. It is a delicious dish on the banquet table, which can be served as crispy fish. Its dried products are even more precious seafood. Overseas Chinese love amphioxus and are known as "homesickness after tasting fish".
