Huigu mushroom is the abbreviation of Huizhou Lentinus edodes, which is one of the four most famous mushrooms in China. In December 1990, the National Lentinus edodes Professional Conference identified the top ten famous mushrooms in China, and Huigu mushroom ranked first. Pleurotus ostreatus is a unique strain with its rich color and flavor, tender meat, refreshing aroma and high nutritional and medicinal value. It is rich in protein, minerals and vitamins, with 18 kinds of amino acids, 7 kinds of 8 essential amino acids and more than 30 kinds of enzymes. As a treasure of mountain vegetables, Pleurotus ostreatus is delicious, especially famous for its rich aroma. It has always been the first-class raw material in Anhui cuisine, and it is suitable for both auxiliary materials and main materials, whether braised, stir-fried or boiled. In the traditional Anhui cuisine, there are many delicacies with the mushroom as the raw material, such as braised mushrooms in oil, shiitake mushrooms and shiitake mushrooms, and so on, all of which are well-known. Hui mushroom also has a good medicinal value. In the Ming Dynasty, famous doctors of Qi nationality, such as Wang Ji, Chen Jiamo and Xu Chunfu, all highly praised the efficacy of Lentinus edodes. Various herbal medicines recorded: "Always eat Lentinus edodes, prolong your intellectual fitness, make you happy, strengthen your bones and muscles, and have a good color"; "It can benefit qi, help food and manage urinary incontinence". So far, people have used mushrooms to treat chickenpox, measles, detoxication, dizziness and headache, lower blood pressure, and prevent colds and various mucosal ulcers, skin inflammation, weakness, scurvy, rickets, cirrhosis and other diseases. Qimen is the main producing area of Pleurotus eryngii, and its geographical environment and climatic conditions are very suitable for the growth of Lentinus edodes. At first, the mushroom in Qimen grew naturally, but in the late Ming and early Qing dynasties, it began to be produced by artificial cultivation. After hundreds of years of continuous improvement, especially since liberation, the new techniques of wood inoculation and bag cultivation have been vigorously promoted, and the output of Pleurotus eryngii in Qimen has made a breakthrough. By the early 1990 s, the annual output has reached more than 100 tons and sold well in domestic and foreign markets. Qimen Lentinus edodes can be divided into flower mushroom, thick mushroom and Pleurotus ostreatus according to their quality and appearance, all of which are top-grade mushrooms, and they are outstanding in 0 categories of similar products. Among them, "Shanhua" brand mushroom produced by Shanhua Group was recognized as "China famous brand product" at the 3rd National Agricultural Expo. In March, 1996, Sun Qimeng, Vice Chairman of the National People's Congress Standing Committee (NPCSC), produced a mushroom named "Huangshan Huigu" for Qimen.
