Many Anhui people like to eat preserved duck gizzards. Wuhu preserved duck gizzards are traditional preserved dishes in Wuhu, Anhui Province, which are salty, nutritious, delicious and simple to make. Ingredients: 500g of duck gizzard, 25g of salt, 35g of soy sauce, 50g of white wine and 15g of white sugar. Method for make: fresh and tidy duck gizzards are selecte, cut along that middle of the feeding hole, the contents are removed, and the yellow skin and the oil skin adhere to the gizzards are scraped off. Wipe with a small amount of salt, rub, rinse with water until there is no dirt, no smell, and drain. Wipe the duck gizzards one by one with some refined salt, put them in a container and marinate for 1 day. Take out the drained brine, put it in another container, add salt, soy sauce, wine, sugar,-(2.5g), marinate for 2 days, turn it over several times during this period, and marinate. Rinse the salted duck gizzards with clear water to remove impurities and dirt, and drain the water. Dried duck gizzards are put into a string every 10, dried to 70%, taken down and shaped. Put the duck gizzard flat on the table, and rub it hard with the back of the palm of your right hand for 2 ~ 3 times to flatten the muscles of the two pieces of duck gizzard. Store it in a cool and ventilated place. Generally, the product can be hung for half a year after light snow, but it will dry up and change flavor if it is too long.
