Liangyuan turtle

Liangyuan turtle is a specialty of Liangyuan Town, Feidong County, Hefei City, Anhui Province. Small turtle is baked with superior flour, sesame oil, sesame seeds, shredded sugar, ginger, kumquat cake and other raw materials. It is small and particularly crispy, with a crisp taste and a slightly sweet taste, which is a bit like a twist, but different, and can be described as delicious. The turtle in Liangyuan is a kind of delicious food called turtle. People who don't know it will think it is a dish made of turtle, but everyone who has eaten it knows that turtle is an out-and-out pasta made entirely of noodles. Because the shape is similar to the soft-headed "soft-shelled turtle", it is affectionately called "little turtle". The little turtle in Liangyuan actually has a little-known story. According to legend, Emperor Qianlong went down to the south of the Yangtze River to visit Cai Yufeng's residence via Liangyuan. Cai Yufeng presented two dishes, a small turtle and a lion's head. After Qianlong tasted it, he felt that the small turtle was "fragrant, crisp and sweet" and the lion's head was "crisp, burnt and fragrant". The taste was wonderful, and he exclaimed, "It's not as good as Liangyuan's." The name of "Liangyuan Erjue" has since spread. In 2010, in the Baihua Garden of Hefei's intangible heritage, Liangyuan's "three wonders" were the most famous, and the small turtle in Liangyuan even seized the infinite scenery. During the sales season such as the Spring Festival, people went to Liangyuan Town to buy small turtles, and the small turtles were almost out of stock.
