Geographical scope There are 17 mountainous areas with unique climate and soil environmental conditions at the northern foot of Xianxialing in Jiangshan City. Xianxiashan is located at the junction of Zhejiang and Fujian, with the main peak at an altitude of 1,503 meters. The mountainous areas are lush with forests, surrounded by streams, dense fog and much diffused light. The average annual temperature is about 17℃, the frost-free period is about 256 days, the average annual precipitation is about 1,600 mm, and the soil is fertile and rich in organic matter. It has been a famous tea producing area since ancient times. The collection and processing technology of specific quality green peony is exquisite. Picking early and tender, insisting on rain, bare leaves, thin leaves, leaves of diseases and insect pests and purple leaves are the characteristics of peony tea picking, which is picked before Qingming Festival and ended after Grain Rain. The picking standard is from one bud and one leaf to one bud and two leaves, and the bud is longer than the leaf. The frying process is mainly divided into several processes, such as spreading fresh leaves, deactivating enzymes, gently kneading, arranging strips, lightly re-kneading, primary baking and re-baking. As early as the Northern Song Dynasty, the tea produced in Xianxia Mountain Area has become one of the famous teas in the south of the Yangtze River. When Su Dongpo was the magistrate of Hangzhou, he wrote a poem to his poetry friend Mao Zhengzhong (a native of Jiangshan)-"Thank you for Xianxia Camellia": "The Zen window is beautiful in the afternoon, and the well is full of ice and snow. Everyone can sit on the table, and the tripod is self-cleaning. Golden hairpin waits for soup eyes, and fish and crabs should also be quick. Therefore, the color, smell and taste are prepared for three times a day. I'm grateful to you, knowing that I'm not taking a sip. " According to the records of Jiangshan City, Su Dongpo, a great writer in the Northern Song Dynasty, tasted Xianxia tea from Jiangshan when he was a satrap in Hangzhou, and he was even more full of praise, calling it "wonderful tea". Su Dongpo said in "Answering Mao Gu Shu": "..... it shows that the strange tea is very fine, but Fengnan has never been here before, and there are mountain monks again. Yimin can taste it with him, but in addition, it is hidden." The poems and books of Mr. Dongpo, the master of Pinquan, show that Xianxia Camellia has been a "three wonders" with excellent color, fragrance and taste during the Yuanyou period of the Song Dynasty (1086-1094).
