"Fish with vinegar in the head and belly" is a traditional flavor dish of the "Lanxiang Pavilion", a century-old store in Shaoxing. The "head-and-belly vinegar fish" with fish head and belly crotch as the main ingredients, which is cooked and eaten alive, is favored by urban and rural merchants, and the business is booming for a while. Later, peers scrambled to imitate, inherited through the ages, and became a well-known Shaoxing flavor dish.
