Hu mutton

Hu sheep are produced around Taihu Lake and its adjacent areas. Mongolian sheep originated in the north, and were brought south to Taihu Lake area with northern immigrants in the Southern Song Dynasty for breeding and reproduction. Hu sheep belongs to lamb breed and is small. Lake mutton is fat but not greasy, tender and refreshing, and it is best to eat hot pot. There are also lake-style mutton shearing and sand-washing sheep tails.
