Wuzhen Sanjiu Liquor is a specialty of Wuzhen Town, Tongxiang City, Jiaxing City, Zhejiang Province. Wuzhen Sanjiu Liquor is famous for its rich aroma, mellow wine taste, soft and soft entrance, refreshing aftertaste and endless aftertaste. It has been popular in Jiangnan area for hundreds of years and has lasted for a long time. It was once listed as a royal tribute and was praised as a fine wine of Wuzhen people. In the old days, the brewing industry in Wuzhen was very developed. In the Ming Dynasty, there were more than 20 brewing workshops, especially Gao Gongsheng, Shunxing and Yongsheng. Now, only Gaogongsheng Bad Workshop is left, formerly known as Gaogongsheng Sauce Garden, which was built in the early Ming Dynasty. At present, there are three products of Wuzhen brand rice wine, namely Sanjiu Liquor at 55℃, white glutinous rice wine at 12℃ and sweet liquor at 4℃. These three kinds of wines are all made by hand using traditional techniques. "Qing Wu Town Records" said: "It is made of white rice, white flour and white water, so it has a name". This wine is mellow, pure, sweet and delicious, suitable for men, women and children. In the past, it was used to entertain guests during the Spring Festival in rural areas. In Wuzhen, there is another name for this wine, "Du Da Jiu". There is a folk saying that "the cat excrement and taro are drunk, and the guests refuse to leave after eating." Sanbaijiu takes locally produced rice as the main raw material. First, the rice is cooked into rice in a large steamer, and then it is placed in a washing basket and cooled with cold water. Then, mix the medicated wine into the rice, stir it evenly, then pour it into the vat, smooth it, dig a small pool in the center, put bamboo pulp on it, then seal the vat, and cover the vat with straw to keep the proper temperature. A few days later, the bamboo pulp in the small pool in the middle of the wine jar has been filled with wine. At this time, the cold boiled water is poured into the jar, and the rice material is submerged, and then the wine jar is tightly covered. After a week, you can open the lid, take it out and put it into a steamer for distillation. After the steam from the steamer is cooled, it will flow out into Sanjiao Liquor, and some Sanjiao Liquor will be made.
