Tongxiang mustard tuber is a specialty of Tongxiang City, Jiaxing City, Zhejiang Province. Tongxiang mustard tuber has a unique flavor of fresh, fragrant, tender and crisp, and its products sell well all over the country, and are exported to Hong Kong and Macao, Southeast Asia and Western European countries. The origin of mustard tuber is in Sichuan. Since 1931, Gu Jinshan and others from Gujiaqiao in Tongxiang Nanri introduced it from Sichuan, Tongxiang began to have mustard tuber. Over the past 60 years, Tongxiang mustard tuber production has developed rapidly. At present, it is planted most in Nanri, Shiqiao, Gao Qiao, Tudian and Baitao. There are dozens of mustard tuber processing plants in the city, with an annual output of more than 1 million tons of finished mustard tuber, ranking second in the country, second only to Fuling, Sichuan. And exported to Singapore, Malaysia, Hong Kong, Macao and other places. Pickled mustard tuber is a delicious and crispy accompaniment. It can be eaten raw, cooked or boiled in soup. Tongxiang mustard tuber is plump and thick because of its mild local climate and fertile soil. According to the analysis and determination, it contains protein, sugar, fat, calcium, phosphorus, iron, carotene, riboflavin, nicotinic acid and other essential components, and is very nutritious. There are two varieties of mustard tuber: early maturity and late maturity. Early-maturing seeds are sown in the Millennium in the lunar calendar and harvested around beginning of spring in the following year; Late-maturing seeds are sown from the autumnal equinox to the cold dew in the lunar calendar, and harvested around Qingming in the following year. In recent years, Tongxiang mustard tuber has been bred and popularized with a number of excellent varieties, which have the characteristics of small rhizomes, strong fleshy stems, plump humps and shallow gullies, low hollowness and high protein content.
