Yanjing cake

Yan Jing Cake is also called "Li Wei Eye Cake", also called Square Cake. The cake is sweet and delicious. It is a special snack in Jiaxing, Zhejiang. Legend: It is said that Li Wei, a confidant of Yongzheng, was instructed to supervise the construction of the Yanguan seawall. One day, the seawall was built for more than two months, and more than half of it was washed away. Li Wei was impatient, and the investigation found that it took too much effort to build a seawall. The officers and men who built the seawall provided food according to the general rations at noon, but they had no strength to work in the afternoon. Later, Li Wei went to a teahouse in Yanguan for dinner, and the boss recommended a special eye cake for him. Two eyes cake down, Li Wei eat very full. So Li Wei changed the name of "Eye Cake" to "Yan Jing Cake" and sent it to the seawall every day. Everyone understood Li Wei's good intentions, and the officers and men worked hard to repair every section of the seawall. Later generations named the eye cake "Li Wei Eye Cake" in memory of Li Wei.
