Sole fish

Sole fish is the characteristic of Xitang, Zhejiang. Xitang water network is interlaced, and its source comes from Taihu Lake. The excellent water quality provides a good environment for the growth of wild thrush and thrush, which live in groups along the river bank, hence the name. It is about one and a half inches long, flat and small, and will never grow up. The cooking methods of wild pomfret fish include braising in soy sauce, steaming, making soup, etc. Among them, the most distinctive ones are salted pomfret fish.
