Snow cabbage, also known as "potherb mustard and snow red", has a long history. There are records of seven-star pickled cabbage in Jiaxing county annals in past dynasties. Now, the reality that "seven-star pickled cabbage is fragrant in Wan Li" has been reviewed in various provincial and municipal publications. Seven-star snow cabbage wins people's favor with its unique freshness and crispness, and it is the leader among many vegetables with its rich nutrition. According to China Vegetable Magazine, potherb mustard is classified as a class A vegetable, which is rich in carotene, cellulose, vitamin C and calcium. In recent years, driven by the market economy, the production of snow vegetables has become the main source of agricultural income in Qixing Town. The town has planted 1,000 hectares of snow vegetables, with an annual output of more than 2.5 million jars, equivalent to more than 30,000 tons of fresh snow vegetables, with an annual output value of more than 50 million yuan. 80% of the snow vegetables in the town are sold to Jiangsu, Zhejiang and Shanghai, and 20% are shipped to Shandong, Shenzhen and other places, occupying the major farmers' markets in Jiaxing. Snow vegetable, a traditional industry, is developing towards industrialization integrating production, processing and sales. Seven-star snow cabbage series products have successively won the Silver Award of the First Food Expo in Zhejiang Province, the New Product Award of Agricultural and Sideline Products in Zhejiang Province and the International Food Boutique Award.
