Wenzhou Fish Cake is a traditional folk specialty in Wenzhou. It is made of fresh marine fish such as crested fish and mackerel in the East China Sea as the main raw materials, with unique condiments, refined by traditional formula and advanced technology, without adding any pigments and preservatives. The meat is tender, fresh and not fishy, low in fat, and extremely rich in nutrition. It contains amino acids calcium, vitamins A, E and C, and potassium, magnesium and phosphorus needed by human body. It is a natural fish food for families, hotels, tourists and gifts to relatives and friends. It is said that Wenzhou Fish Cake was recorded as early as the Han Dynasty, and it became very famous in the tenth year of the Republic of China (1921). At that time, Zhou Ashi, a native of Yongqiangsha Village, monopolized fish cakes. The main raw materials are tofu, mountain flour and fish, which are cut into long strips, steamed in a steamer and then fried in an oil pan. People call him "fish cake". Now, the method of making fish cakes has been further improved. When making fish cakes, firstly, fish such as yellow croaker and hairtail, which are less prickly and fleshy, are scraped into minced meat, added with wine, mixed with human tofu, mashed vegetables, onions, ginger and sweet potato powder and kneaded into dough, and then made into cakes, or put them in a steamer, or fried in an oil pan until brown, and then stewed in a pan. They can be eaten immediately, cut into pieces and boiled, or shredded and stir-fried with seasoning. It tastes delicious, which can not only enjoy the delicacy of fish, but also save the trouble of deboning, especially suitable for the elderly and children. Nowadays, on the basis of inheriting the tradition, we introduce fresh technology and equipment, and adopt the technology of mechanical meat picking, rinsing and dehydration at the same time to produce modern fish cakes with more nutrition, delicacy, elasticity and luster. The added value has been greatly improved and the shelf life has been extended. With the maturity of various conditions, the fish cakes in our city have completely changed the situation of "hidden in the boudoir" and strode to the international arena. At present, there are fish cake processing enterprises in all counties and cities in Wenzhou, among which Ruian and Cangnan are relatively concentrated and on a large scale. Among them, the "Tangji Wharf" brand fish cake produced by Cangnan Bangfeng Aquatic Products Processing Factory won the gold medal of Zhejiang Agricultural Expo in 2004.
