Sihong hollow vermicelli is a specialty of Sihong County, Suqian City, Jiangsu Province. In the 18th year of Hongwu in Ming Dynasty, Crown Prince Zhu Biao led officials of civil and military forces and craftsmen of various colors at Yangjiadun, not far from Shuanggou, to build the ancestral tomb. He heard that the hollow noodles in Shuanggou were delicate and delicious, and ordered Wang Menghui, the magistrate of Sizhou, to go to Shuanggou to make special noodles of various colors, including several hundred kilograms of jade turtle hollow noodles, crab yellow hollow noodles, shrimp seed hollow noodles, chicken juice hollow noodles and egg hollow noodles, and asked the courtiers to send them to the palace specially. According to legend, Zhu Yuanzhang, the emperor of the Ming Dynasty, only gave each minister a small bowl of double-ditch hollow noodles when he was a hero at the big banquet. Sihong hollow vermicelli can be made into more than ten refined varieties such as chicken soup noodles, shrimp seed noodles, egg noodles, jade turtle noodles, crab fresh noodles and crab yellow noodles with special ingredients, and these varieties have their own characteristics.
