Sihong crayfish is a specialty of Sihong County, Suqian City, Jiangsu Province. The "Jinshui brand" Hongze Lake crayfish in Sihong is in short supply in Nanjing, Wuxi, Changzhou, Shanghai and Ningbo. Sihong County has 40% of the water surface of Hongze Lake, and is endowed with unique aquatic resources, which is very suitable for crayfish culture. In recent years, the value of crayfish in this county has been soaring, and the breeding benefits have risen sharply. For this reason, the county government has set up a leading group for the implementation of crayfish science and technology projects, a scientific and technological tackling group and an experimental demonstration group. According to the suggestion of researcher Tang Jianqing of the Provincial Freshwater Fisheries Research Institute, a high-quality crayfish population protection base has been established in the reed maze of wetlands. At the same time, incentives have been introduced, and the scale of continuous farming has reached more than 1,000 mu, and the county finance subsidizes 200 yuan per mu. Up to now, the number of crayfish farmers in the county has reached more than 5,000, and the breeding area has expanded from 80,000 mu to 150,000 mu. Six aquaculture modes have emerged, such as single culture in pond, shrimp culture in beach and net culture, with an average yield of 200 kilograms of crayfish per mu and an average economic benefit of more than 2,500 yuan per mu. In Sihong, every "Jinshui brand" Hongze Lake crayfish bears the "golden signboard" of ecological farming. Sihong county clearly stipulates that crayfish should not be cultivated in the small ditch and small river, and the water quality of crayfish must meet the prescribed standards. If there are no emergent plants or submerged plants in the growing environment, crayfish must be planted artificially. Feed, to use the designated special feed, to ensure that the feed does not contain any prohibited substances. The relevant departments of the province have conducted random inspections on crayfish that imitate ecological farming for many times, and the pass rate has been 100%, which has been recognized as pollution-free aquatic products by the Ministry of Agriculture. The ecological crayfish cultivated artificially in Sihong not only sells well in China, but also wins the favor of consumers in the United States, Japan and South Korea. Only Chengzihu Food Co., Ltd. exports more than 1,000 tons of "frozen boiled shrimp" and "whole-limb crayfish" to the United States every year.
