Yangzhong saury is a specialty of Yangzhong City, Zhenjiang City, Jiangsu Province. Swordfish is one of the three delicacies of the Yangtze River with small scales, edible, soft spines and delicious meat. Cooking method: steaming, frying and braising. The best time to eat swordfish is before the Qingming Festival, when it was full of thorns. But before Tomb-Sweeping Day, the swordfish was soft and could almost be eaten with fish. Once the Qingming Festival is over, the fishbone will harden and the meat will thicken. The species of swordfish, Lake Knife, is also called Maomao Knife, which is thin and small, with small body thickness, yellow tail and dull skin.
