Many people know that there are "three eccentrics" in Zhenjiang: the balsamic vinegar is not bad, the meat is improper, and the lid is cooked in the noodle pot. Pot cover noodles are one of the "three eccentrics". With regard to pot cover noodles, Zhenjiang people love to eat them, and gradually they have gained some fame in other places. But what exactly is pot cover noodles? I, a Zhenjiang native, didn't pay much attention to it before. This communication with the environment from the heart has prompted me to know something in detail. Pot cover noodles, as the name implies, are noodles related to the pot cover-that is, noodles covered with a small pot cover and floating on the water, so that the noodles are strong, neither soft nor hard, and delicious. To put it bluntly, pot cover noodles are a way to eat noodles, not a variety of noodles. There are several versions about the legend of pot cover noodles. First, it is said that there was a family in Zhenjiang in ancient times, and the wife was the husband. The general idea was to slide the soup pot cover on the cooker into the noodle pot (in the past, the cooker was burned with firewood, there were two cookers on the cooker, and there was a soup pot in the middle of the two pots, which was boiling water. There is an old saying that "the water in the soup pot is hot with it", which means that when the fire is lit, the soup pot can be put in by the way. I didn't know that the noodles coming out like this were more delicious than usual, neither hard nor rotten, but quite soft and cooked. So, they opened a noodle shop with others. As a result of putting the lid in the noodle pot, it is also a partnership to open a shop, so the noodle shop in Zhenjiang is also called the "partner noodle shop", and the noodles that come out are called "pot-covered noodles". Secondly, it was said that there used to be a family where only dad took three sons to live, and there were no women in the family. The life was poor and made do, and the pot was never washed and there was nothing to eat. Once a guest came to my home, there was only some noodles left, and there was no seasoning such as oil, salt, sauce and vinegar. I just put the noodles in a big pot and cooked them. I used to pick up the lid of a small pot that I usually cooked myself and put it in the pot. I didn't pay attention, so I went out to borrow seasoning from my neighbor. When I came back, the noodles were cooked, and the room was full of fragrance. It turned out that the lid never washed, and the seasoning on it was very complete. From then on, the lid came out. Thirdly, it is said that when Qianlong went down to the south of the Yangtze River to Zhenjiang and visited the noodle shop, the owner of the shop panicked for a moment and put the small pot cover on the big pot, but the noodles he didn't want to cook were full of fragrance, hence the name. In fact, these are just folklore. I think the first legend is more reliable. It may be an accidental discovery, and after many experiments, it became an invention.
