Fanchuan Xiaodu is a special food in Fan Chuan Town, Jiangdu District, Yangzhou City, Jiangsu Province. Fanchuan Xiaodu, commonly known as Pubao meat. The main ingredients of xiaodu are lean meat and fat, the ingredients are tofu skin and starch, and the seasonings are ginger, onion, wine, sugar, salt and spices. You have to simmer with old bittern soup, and grasp the heat when you simmer, so that you can taste it and become a fragrant bun meat. Fanchuan Xiaodu can be traced back to the early Qing Dynasty, about 300 years ago. According to legend, there was a chef named Lu Gaojian in the ancient town of Fan Chuan who made a "small belly". One day, Lu Gaojian went out and accidentally picked up a broken pu mat discarded by Tie Guai Li, one of the "Eight Immortals". When he took it home, he threw it into the stove as sundries and burned it. Unexpectedly, after the broken pu mat was ignited, the house was full of incense, and the "small belly" steaming on the stove also had a share. Since then, the reputation of Fan Chuan Xiaodu has spread. After continuous processing and improvement from generation to generation, now, the reputation of "Fan Chuan Xiaodu" has spread far and wide. Nanjing Xiangdu is a cured product, and Fan Chuan Xiaodu is marinated with fresh meat, commonly known as Pubao meat. Wang Zengqi, a famous writer, mentioned it in his novel Different Bing. The production method of Fanchuan Xiaodu is as follows: 70% lean pork hind legs and 30% fat, cut into dices slightly larger than peanuts, add onion, ginger, wine, proper amount of sugar, salt, starch and precious spices, mix well, wrap it with tofu, put it in a cattail bag with a diameter of five inches and a half, tie the seal tightly with fine hemp rope, and tie it at a distance of 3-5 on the waist. All the above procedures have been completed, and it is necessary to simmer with old brine soup to grasp the heat before it can be tasted. After simmering, unbuckle it and pour it out, just like a small gourd with a printed bun, cut into pieces, and smell fragrant.
