Gaoyou Lake Hairy Crab is a specialty of Gaoyou City, Yangzhou City, Jiangsu Province. Gaoyou lake wetland is rich in biological resources, the most prominent of which is Gaoyou Lake hairy crabs, which are pure natural and can be called the best in the world. When you come to Gaoyou to play, you must watch the lake light and eat hairy crabs. Gaoyou lake, with a water area of 760 square kilometers, is the third largest lake in Jiangsu Province, with Huaihe River in the north and Yangtze River in the north. Gaoyou lake has vast waters, excellent water quality, unique ecological environment and abundant aquatic products, especially lake crab, which became one of the royal tributes as early as the Northern Song Dynasty. In Song Dynasty, Su Shi greatly admired gaoyou lake crab. He wrote "Yangzhou sends a little tour with local things", in which this "local things" refers to gaoyou lake crab. Su Shi went to Gaoyou to visit Qin Guan. On the cultural tour platform, the two of them watched the lake scenery while tasting crabs. Poets in the Song Dynasty once wrote poems praising: "Recalling the past trip to Poxian, the characters were all romantic for a while, and the fragrant purple crabs offered drinks, and the colored pens and silver hooks were paid for singing." Since the Song Dynasty, gaoyou lake crab has become a delicacy for Yangzhou people. According to local recipes, there are more than ten kinds of dishes made from lake crab, such as steamed crab, fried crab thread, snow crab bucket, crab bean curd, shark's fin grilled with crab roe, lion's head with crab roe powder, crab roe soup packets and so on. The waters of gaoyou lake in Gaoyou City, Jiangsu Province and its watersheds are 119 13 ′ to 119 50 ′ east longitude and 32 38 ′ to 33 05 ′ north latitude, with a water area of about 1,963 square kilometers.
