Ducks raised in Gaoyou, Jiangsu Province, are big, with tight fur, deep diving and strong foraging ability. Generally, they are kept in water nets and eat more fish and shrimp. The eggs they give birth to are fine and have more butter, with an average weight of about 105 grams each, which is about 30 grams heavier than ordinary duck eggs. Every year before Tomb-Sweeping Day, the local people pickled duck eggs, and they can eat them one month later. Boiled salted duck eggs are red and oily. According to records, Gaoyou salted duck eggs have become a treasure on the table as early as the Qianlong period.
