Lotus root mat is a unique category in Weiyang cuisine. It started in the Qing Dynasty and was built in the Republic of China. It flourished in the mid-1980s. With lotus root as the raw material, the whole lotus root mat is made into more than 100 kinds of exquisite delicacies with five flavors, such as fragrant, sweet, salty, sour and spicy, through the processes of frying, frying, cooking, stewing, frying, pasting, boiling, steaming, roasting, smoking, boiling, rinsing, mixing and marinating. During the 13th National Congress of the Communist Party of China in 1987, Jixing, senior chef of our county, was ordered to go to Beijing to make four tables of lotus root mats in Dadu Hotel, with more than 50 kinds of fine lotus root dishes, which made the delegates and foreign guests stunned. By the central leadership, and was included in the "national cuisine" series. As a fine food and cultural product, the lotus root mat plays an important role in promoting the development of Dutch culture. According to historical records, there are more than hundreds of poems, words, songs, couplets and essays by historical and cultural celebrities in Baoying, as well as a series of myths and legends such as Lotus Fairy, which have become precious spiritual wealth of the whole society. As a unique category in Weiyang Department, the whole lotus root mat has become a major feature of Baoying, which is a model of the combination of lotus root products and food culture. In 1998, Baoying was named "Hometown of Lotus Roots in China" by six national ministries and commissions, and became the only famous place of whole lotus root mat at home and abroad.
