There is a kind of specialty red squish fish in the river port where salt and fresh water cross Yancheng seashore, which likes to go against the current, so it is also called wave-pushing fish. In the early years of the Republic of China, Yancheng Hequ Restaurant made this dish, which was quite famous. The preparation method is to remove the stinging card of fish, add ham, pickles, lard, etc., and stew it with fish soup. The shape is complete, tender but not broken, and the soup is thick and strong, especially in late autumn and early winter.
