Yunwu tea, a specialty of Lianyungang, has a long history and excellent quality. Records of Food Goods in the History of Jin recorded that Zhang Zong set up a workshop to make new tea in Haizhou (now Lianyungang) in March, 1199. In the 24th year of Guangxu reign in Qing Dynasty (1898), Shen Yunpei, Song Zhiji and other gentry who lived in China raised funds to develop Yuntai Mountain, set up a "tree art company" and cultivated Yunwu tea, and the tea they produced won the Nanyang Association Award. In recent years, Yunwu tea has achieved great development. There are nearly 2000 mu of tea fields in the city, with an annual output of nearly 100 tons of Yunwu tea. The production process of Yunwu tea is scientific and standardized, and there are strict technical requirements from fresh leaf picking, enzyme fixation, rolling, shaping and drying to brewing. In 1980, at the tea tasting in Jiangsu Province, it was ranked as the three famous teas in Jiangsu Province, along with Nanjing Yuhua Tea and Suzhou Biluochun Tea, with its unique characteristics of tight rope, eyebrow-like shape, graceful front seedlings, moist green, lasting fragrance, fresh taste, clear soup color and even leaf bottom. According to expert appraisal, Yunwu tea is rich in theophylline, tea tannins and vitamins. Drinking Yunwu tea can refresh and quench thirst, clear away summer heat, induce diuresis, relieve bloating, get rid of boredom, lower blood pressure, eliminate fatigue and improve memory.
