Laver, commonly known as Suocai, also known as Zicai and Ziying, is an edible population of phyllodes in the genus Porphyra of Bangiaceae in Rhodophyta. Porphyra is rich in nutrition, its protein content exceeds that of kelp, and it contains more carotene and riboflavin. Every 100g of dried laver contains 24-28g of protein, 0.9g of fat, 31-50g of carbohydrate, 330mg of calcium, 440mg of phosphorus, 32mg of iron, 1.23mg of carotene, 2.07mg of riboflavin, 5.1mg of niacin, 3.4g of alanine, 3.2g of glutamic acid, 2.4g of glycine, 2.6g of leucine and 1.4g of isoleucine. (1) The bioactive substances of protein and amino acid Porphyra are very important for plant life activities. Generally, the protein content of edible laver is 24%-28%, which is much higher than that of ordinary vegetables, and there are many amino acids necessary for human body. Porphyra protein contains many neutral and acidic amino acids, such as alanine, aspartic acid, glutamic acid, glycine, proline and so on, which is a feature that all terrestrial vegetable plants do not have. (2) Compared with terrestrial plants, the fat content of laver is lower, mostly below 1%, and palmitic acid of saturated fatty acids accounts for the vast majority, about 20%; The content of onion acid and stearic acid in the bean is less, accounting for 2% respectively; Unsaturated fats-linoleic acid, linolenic acid or octadecatetraenoic acid, which have a good health care effect on human body, are more, accounting for 10%-30%, and highly unsaturated fatty acids above C20 also have a certain content. (3) Vitamins Porphyra contains a variety of vitamins, and the content of B vitamins is not inferior to that of vegetables. The content of B vitamins in laver, especially vitamin B12, which hardly exists in terrestrial plants, is very high. In terms of dry matter, the content of vitamin B12 is similar to that of fish, and the content of vitamin C is also very high. Vitamin B12 has the effects of activating brain nerves, preventing aging and memory decline, and improving depression. (4) Inorganic: Seawater contains extremely rich inorganic components, and laver has the function of absorbing and accumulating inorganic substances in seawater, because the inorganic substances in some lavers are extremely rich.
