Add appropriate amount of ginger juice, white sugar, koji wine and refined salt, mix well, pour it into a prefabricated casing with a length of about 40 cm, tie both ends tightly, bend it into a U shape, and dry it for more than 5 sunny days. The Rugao sausage made in this way has the characteristics of neatness, tight meat quality, proper proportion of fat and thin, dryness and firmness, moderate size, bright color, suitable saltiness and sweetness, rich flavor and rich nutrition, and its product quality is well-known at home and abroad.
