Clear soup to remove lung

The famous dish "Clear Soup and Lung Removal" in Changshu, Jiangsu Province was created by Zhu Aer, a famous teacher in Mountain View Garden in 1920. The clear soup was made from mackerel viscera and lung removal as the main material, with ham, bamboo shoots and mushrooms. The fish soup was pale white, with pink fish liver, fat and waxy soup, crispy fish liver and fresh and fragrant taste, which was widely welcomed in the local area.
