The famous dish "Clear Soup and Lung Removal" in Changshu, Jiangsu Province was created by Zhu Aer, a famous teacher in Mountain View Garden in 1920. The clear soup was made from mackerel viscera and lung removal as the main material, with ham, bamboo shoots and mushrooms.
