Pan-fried chicken is a famous dish created by Wangsi Restaurant in Changshu at the beginning of this century. Wangsi Restaurant was founded in the Guangxu period of Qing Dynasty (1887) as a small hotel opened by local villager Wangsi. It is characterized by "oil chicken and white wine, mountain flavor and wild cover". This dish is made of local "Sanhuang" hens by a unique cooking method, which has the characteristics of golden and shiny color, fat skin and fragrant aroma. This dish should be cooked in large quantities.
