Pine mushroom oil noodles, a traditional characteristic noodle in Changshu, are known as the "king of vegetarian dishes", and Xingfu mushroom oil noodles are famous in Changshu. Mushroom is a kind of wild mushroom, and pine mushroom is a specialty of Yushan Mountain in Changshu. It grows in the roots of pine trees, not every season. Its main growing season is spring and autumn. At that time, the mushrooms are tender and fresh, but there are many bugs in the freshly picked mushrooms. After tearing off the surface film and washing it, it must be soaked in salt water for three or four hours, and then it can be boiled in plain oil. This vegetable oil can't be used casually. When processing mushroom oil, you must use pure farm oil. The basic steps are to pat the ginger pieces loose and then put in the vegetable oil. When the oil pan burns to smoke, leave the pan away from the fire, slowly add the seasoning such as star anise and clove, then put the mushrooms in the oil pan and fry them thoroughly, then move to high heat and add soy sauce, salt and sugar until the water evaporates. Mushroom oil noodles with mushroom oil as the "topping" of noodles are fragrant and delicious, which is not comparable to ordinary mushrooms. Mushroom oil noodles, originally a vegetarian dish eaten by monks in Kofukuji, Changshu, were later favored by diners. On October 19th, 1947, Soong Ching Ling and Song Meiling took a tour in Kofukuji and had a picnic in the forest outside the temple. A bowl of Xing Fu mushroom oil noodles was served, which was fragrant and attractive in color. After tasting it, the Soong sisters felt that they deserved their reputation and were even more full of praise, saying, "Good, good, good, I didn't expect such delicious dishes and noodles in a small place".
