Taro is a tuber of Araceae, which is rich in reducing sugar, crude starch, calcium, phosphorus, iron and various vitamins and amino acids, among which the iron content is particularly prominent, with 261 mg/kg (based on fresh weight) and crude protein content of 2.04%, which is higher than that of sweet potato, yam and cassava.
