Suining vermicelli is a specialty of Shaji Town, Suining County, Xuzhou City, Jiangsu Province. The raw materials of Suining Shaji vermicelli mainly come from the starch in mung beans, sweet potatoes or potatoes. Suining Shuifenpi is mainly made into cold dishes, with a little spinach leaves, supplemented by shredded red pepper, garlic paste, vinegar, sesame oil and so on, which is unique in cuisine. Stir-fry or make soup in winter. Suining vermicelli, also known as "Shaji vermicelli" and "Zhangjia vermicelli", is an authentic farm dish. That Zhang family has been living in Shaji Town in the east of Suining today, and has always kept the Zhangjia vermicelli craft handed down from generation to generation. The traditional making technique of Suining vermicelli is ancient, and it has local characteristics in northern Jiangsu. From the original mung bean processing to the finished vermicelli, six processes are needed. Namely, bean selection → soaking → pulping → precipitation → paste blending → spinning, etc. This traditional gouache skin has the characteristics of clean and clear posture, soft and smooth texture and fresh and cool taste, which makes people never tire of eating it. There are many ways to eat Suining Shuifenpi, especially cold salad. If the seasoning is mainly pepper, it is called spicy skin, and if the seasoning is mainly vinegar, it is called cold skin. In winter, gouache skin can also be fried or made into various soups, which is equally delicious. Zhang Haifeng, a descendant of the traditional vermicelli family in Shaji Town, Suining, on the basis of ancestral production techniques, has made a series of vermicelli products, such as vermicelli cakes, vermicelli pills, dried vermicelli and fresh vermicelli, all of which are vacuum-packed. On February 28th, 2008, with the approval of the Trademark Office of the State Administration for Industry and Commerce of the People's Republic of China, the "Trade Source" brand trademark was registered, and the products were not only in short supply in the domestic market, but also entered the international markets such as Singapore and new york.
