Suining Shuifenpi, also called spicy skin, is a famous dish in Xuzhou, which originated in the Song Dynasty and was created by peasant people. The production process is exquisite, and the raw materials mainly come from the starch in mung beans, sweet potatoes or potatoes. Suining Shuifenpi is mainly made into cold dishes, with a little spinach leaves, supplemented by shredded red pepper, garlic paste, vinegar, sesame oil and so on, which is unique in cuisine.
