This dish has a long reputation, because it has a long history and many legends. Someone once wrote a poem to a poet, saying, "This fish is not an ordinary fish. It was in Tianchi and then in Xu. Why are there many holes in the nose, and the lake is full of fragrance. " Generally, carp have two nostrils, but the carp produced in Tongshan County and Peixian County along Weishan Lake have four nostrils, which is fatter than the carp of the Yellow River. The second burst of the Yellow River took the riverbed of Surabaya into the sea and formed Weishan Lake after a long period of scouring. This change provided a special living environment for the growth of four-hole carp, but the yield was scarce. On October 29th, 1952, accompanied by Luo Ruiqing and Mayor Zhang Guangzhong of Xuzhou, President Mao Zedong boarded Yunlong Mountain. When talking about Xuzhou's scenery, Chairman Mao said that Xuzhou's four-hole carp is world-famous. When eating, the chef specially made a four-hole carp, which was praised by Chairman Mao after tasting, saying that it really deserved its reputation. In the Spring Festival of 1990, the Xuzhou Poetry Association invited overseas poets Yaji at the Banquet Spring Garden Hotel, where a sweet and sour four-hole carp was served. After someone tasted it, they improvised a poem saying: "The fish jumped forward to welcome guests, and the four holes were happy to report good news." Spring is full of Pengcheng guests who want to get drunk, and sweet, sour, crisp and tender are always pleasant. " The characteristics of sweet and sour four-hole carp are crisp outside and tender inside, with strong sour and sweet taste.
