"Wuxi Meat and Bone", also known as "Sauced Ribs", is a famous local flavor dish with a long history in Wuxi. It is crisp and rotten in meat, rich in flavor, fat but not greasy, sweet and salty, purple in color and fragrant. According to legend, this dish began in the Song Dynasty and was created by a cooked butcher shop in Wuxi city with the help of the "Jigong Living Buddha" who had been helped by it. The "Wuxi Meat Bone" became famous and passed down from generation to generation. In the Qing Dynasty, the sauce pork ribs operated by Mo Xingsheng in the south gate of Wuxi were also famous. Later, Yushen Meat Shop near Sanfengqiao, Wuxi, hired a chef to cook meat at a high salary, learned from the experience of other shops, and made improvements in material selection, seasoning and operation. Specially, the pork chops and square meats of fine-skinned white pigs produced in Wuxi were selected as raw materials, cooked with soy sauce, top-grade wine and sugar made from pure soybeans, and the square meats and ribs were cooked together to make the soup more mellow and delicious. The ribs cooked in this way are not only delicious outside, but also rich in flavor and abnormal in taste. At the end of the Qing Dynasty, Sanfengqiao Meat and Bones, together with Wuxi Qingshui Oil Gluten and Huishan Mud Afu, were well-known at home and abroad as the three famous products in Wuxi.
