Liangxi is another name of Wuxi, Jiangsu Province. A river running through the urban area in the west of Wuxi is called Liangxi. According to legend, it was named after it was repaired in Liang Wudi in the Southern Dynasties. Others say that Liang Hong, a famous person in the Eastern Han Dynasty, once lived here, so he got his name. Wuxi is a beautiful city with beautiful scenery, with the Great Lake in the south and Huishan in the west. Here is rich in aquatic products, and the herring, crucian carp and pond carp are fresh and tender, especially the eel, which is fresh, fat and tender, and is more loved by people. It is said that in the late Ming and early Qing dynasties, Wuxi chefs cooked live eels with boiling water, boned and shredded, fried them in an oil pan, and then cooked them in thick brine with wine, soy sauce, sugar, monosodium glutamate and five spices. The eels are sweet, fresh and crisp, and they are excellent dishes to accompany wine. Later, this dish became famous all over the city and Jiangsu, and became a famous traditional flavor dish in Wuxi. Now many Suzhou-Wuxi-style restaurants in Shanghai operate this dish.
