Sweet and sour milk melon product is a new product developed by Shanghai Vegetable Processing Plant No.3 on the basis of lactic acid cucumber. Production method: 1. Raw material requirements, using high-quality raw materials and auxiliary materials. Cucumber raw materials are directly hung evenly with the production site, requiring vegetable farmers to pick them after the dew dries in the morning. When picking, it must be in accordance with the requirements of product quality. The specification is about 9 cm long and 1.2 cm in diameter. It is long, upright and full, without yellow head and big belly. 2. Picking and fermentation: after picking, it is directly sent to the factory for processing. Soak fresh and tender cucumber in lime 1, take it out after soaking, rinse it with clear water and drain it, then soak it in 7-10% sodium amide for fermentation. When the color of cucumber changes, take it out and drain it, dilute it with cold boiled water and wash off the salt on the melon. 3. Marinated fermentation: immerse the cucumber in the pre-mixed mixed brine, put it in a jar and continue the fermentation, and turn the jar twice a day for one week. 4. Packaging: the ripe pumpkin is packed and disinfected with enough sugar bittern to obtain the finished product. Quality standard: moisture 66.47%, total sugar 28.73%, reducing sugar 23.28%, total acid 1.77%, amino acid nitrogen 0.014% and sodium chloride 1.62%.
