Pine nut fish and rice introduction: Origin: China. History: Fish and Rice with Pine Nuts is a new famous dish created by famous chefs Mo Yougeng and Mo Youcai of Yangzhou Hotel in Shanghai in the 1970s. In the 1960s, the Mohs brothers created "Shrimp with Pine Nuts", which was well received by customers. On this basis, using the method of Sichuan famous dish "Fried Chicken Rice" for reference, the "Pine Nut Fish Rice" was made with mandarin fish meat as fish rice, pine nuts produced in the northeast as ingredients, and green and red peppers as color matching. At the end of 1979, the American women's delegation tasted this dish in the store and specially left a message in the VIP guest book: "We especially like the dish of' diced pine nuts'. Features: It is made of mandarin fish or herring and pine nuts. The dishes are bright in color, the fish and rice are white and tender, the pine nuts are crisp, fresh and salty. Technology: Boning and peeling mandarin fish or herring, cutting into fish rice, adding Shaoxing wine, refined salt, monosodium glutamate and a little pepper, egg white and dried starch, mixing and sizing. Green and red peppers are cut into fine particles respectively. The pine nuts are first cooked in the oil pan and taken out. Heat the wok, slide the wok with lard, add oil, when it is 40% hot, add fish rice, spread it with chopsticks, add pepper particles, and drain when the oil is 60% hot and the fish rice is formed. Leave a little oil in the wok, add pine nuts, fish and rice, peppers, add monosodium glutamate, refined salt and a little chicken soup, bring to a boil, thicken with a little wet starch, and drizzle with sesame oil. Award: In 1983, the "Pine Nuts and Fish Rice" made by former Yangzhou Hotel special technician Li Yaoyun (now a national senior technician) was highly praised and awarded the title of national excellent chef.
