In those days, the small stupid chicken that was free-range and the wild hazel mushroom stewed in a large pot were traditional dishes for the guests in Northeast China. Stewed mushrooms with chicken, there are many kinds of mushrooms to choose from, but my favorite is wild hazel mushrooms. Little stupid chicken will not be introduced much, because it does not belong to Yichun specialty. Here, I will focus on the wild hazel mushrooms in Yichun. Wild hazel mushroom is one of the unique delicacies in Northeast China, and it is also one of the few edible fungi that can't be cultivated artificially. It grows in the hazel wood forest in the fertile mountains and forests of Northeast China, is free from any pollution, and is a real green food with extremely rich nutrients. The wild hazel mushroom in Yichun is the best among the delicacies in Northeast China. Yichun locals all know that wild Corylus heterophylla has obvious curative effect on hyperlipidemia, hypertension and arteriosclerosis, and it has obvious anti-cancer effect and enhances the body's immunity after long-term consumption. There is abundant rain this year, and the output of all kinds of mushrooms is very high. Only hazel mushroom, because it can't be artificially propagated, is in short supply even if its yield is high. Among the instant noodle brands such as Master Kong, there is also the taste of stewed mushrooms with chicken, which is simply ruining this "famous dish" in Northeast China! My mother's practice of cooking chicken stewed mushrooms is: first, soak hazelnuts in water, remove impurities, wash and tear them. Blanch the slaughtered chicken in boiling water, take it out, and wash away the blood stains. Then, add light chicken and appropriate amount of water into the pot, boil until it boils, skim off the floating foam, add cooking wine, refined salt, monosodium glutamate, soy sauce and onion ginger, and simmer until the chicken is cooked, add mushroom and stew until the chicken is cooked, and take out the pot.
