Daoxiao Noodles got its name because it was all cut with a knife. Use a knife (or square thin iron sheet) to cut the dough into a willow leaf shape and put it into the soup (flat or triangular noodles can be cut with different knife methods). Some experts can cut more than 130 knives per minute (head cutting, two-handed cutting, two-headed cutting and other techniques belong to acrobatic techniques, and master pastry chefs often despise this).
