Xiangmei wine

Xiangmei wine is a fruit wine made from Prunus mume fruit by the process of sorting, crushing, fermentation and soaking. Prunus mume is a semi-shrub fruit tree of Rubus in Rosaceae, and there are four varieties: (1) Tray or Marin. Berries are dark red or bright red, distributed in northeast provinces, and the fruits are smaller than European raspberries. (2) Rubus, small shrubs and red berries are distributed in Guangxi, Guangdong, Zhejiang, Anhui and other provinces. (3) Rubus parvifolius, also known as strawberry seeds, has red berries and is distributed in Jiangxi, Sichuan, Shandong, Shaanxi and Northeast provinces. (4) Prunus mume, also known as Pallet, Marin and Raspberry, has large berries with red, orange or purplish red fruits, which are distributed in mountainous areas of Heilongjiang Province. Prunus mume, introduced by the Soviet Union in the early 20th century, is a perennial shrub plant in cold regions, with a height of 1-2 meters and a slender shape. After autumn, it is buried and cultivated for the winter, and the ground is broken in the Spring Festival, and the wood poles are erected. It blooms in the middle and late June, and the fruit matures 20 days after flowering. The whole fruit harvesting period is 50-60 days. The red variety is the most, as well as black and yellow raspberries, and the fruit particles are semi-spherical. It is required that the brewing materials must be fresh, and it is not allowed to stay overnight. Sensory properties of Xiangmei wine: ruby red, clear and transparent, with rich and pleasant fruit aroma and wine aroma, harmonious aroma, sweet and sour taste, mellow and soft, full-bodied and typical. Sweet plum contains 83-88% water, 0.8-2.0% protein, 5.3-6.8% sugar, 2.0-4.0% cellulose, 0.3-1.6% pectin and 0.8-3.0% organic acid (calculated by malic acid). Contains minerals such as sodium, potassium, calcium, magnesium, phosphorus and iron. Contains vitamins B1, B2, B5, C, P, K1, E, carotene, etc. Xiangmei wine is also a nourishing health drink, which has the functions of quenching thirst, eliminating phlegm and detoxifying. Traditional Chinese medicine uses it to treat gout, erysipelas and nocturnal emission.
