The stipe is cylindrical, hollow, nearly white, and the surface of the cap has irregular polyhedral dimples, which are like sheep's bellies, hence the name. Morchella is crispy and tender, delicious and nutritious, and it is called a delicacy. Because of its chemical composition, the fruiting body contains protein, free amino acids, a large amount of alanine, glutamic acid, proline, Cis-3-Amino-L-Proline and a small amount of tryptophan, tyrosine, cystine and cysteine. The mycelium contains 2.04% neutral glyceride, and the saponified fatty acid contains 52.8% linoleic acid, 23.6% oleic acid, 14.1% palmitic acid, 5.4% stearic acid and a small amount of Hepeadecanoic acid. In addition, it also contains trehalose and cellulose. Every hundred grams of dried Morchella contains 24.5g of protein, 2.6g of fat, 39.7g of carbohydrate, 7.7g of crude cellulose, 13.6g of water, 3.92g of thiamine, and a small amount of riboflavin and nicotinic acid. Morchella contains 19 kinds of amino acids, among which 8 kinds of amino acids necessary for human body are not only all contained, but also rich in content. Therefore, it is not only one of the traditional edible fungi that people in China like, but also a kind of edible fungi that foreign people like very much. But also has extremely high medicinal value, and has the functions of strengthening the spleen, regulating qi and resolving phlegm. It can be used to treat dyspepsia, excessive phlegm and shortness of breath. Modern science reports that Morchella has inhibitory effects on three kinds of tumors, especially on sarcoma S-180, and also on Escherichia coli and Bacillus subtilis. The wild yield of Morchella is not much, and the market is rare. If artificial cultivation is carried out to continuously meet the market demand, it will not only broaden people's employment opportunities, but also provide people with good healthy food. Isn't it a very promising career?
