Also known as "toad", the scientific name is "Chinese garden frog". Jilin's frog, flying dragon, bear's paw and Hericium erinaceus are listed as the four great delicacies in China. Frog looks like a frog, but its head is wide and flat, slightly triangular. The snout is blunt, round and wide, slightly protruding from the mandible, and the snout edge is obvious. There is a horn-shaped mole in the eardrum. The body is short and wide, the back is yellowish brown or dark brown, and there are "eight-shaped" black spots. The side of the body is gray, with a few scattered wart granules. The ventral surface of the male frog is milky white, and the female frog is red and yellow with orange spots. The forelimbs are thick and short, the hind limbs are developed, the joints are flexible, there are no suction cups and horizontal grooves at the toe ends, and there are black stripes on the back of the limbs, which are good at jumping. It thaws out water in spring and lives in the damp places of mountains, forests or grass on river cliffs. Its skin color changes with the seasons, and it is green in spring, yellow and brown in summer and full brown in autumn. The eastern mountainous area of Jilin Province is the main producing area of frogs, and people have to catch them three times a year: one is to "open the river" in spring, the other is to "cut the land" in autumn, and the third is to "avoid the elements" in winter. After opening the river, the frog has a long hibernation, and its abdomen is clear, and its meat is especially fresh and tender; When cutting land, it is rich in nutrients and fat in meat; Hibernating frog, meat serum, don't spare the flavor, especially precious. Frog is rich in protein, sugar, a little fat and a lot of water. Compared with meat (chicken, duck, goose, cow, horse, sheep and fish) that people eat every day, it is superior in taste and nutritional value. Frog oil is nutritious. According to the determination, its protein content is 56.53%, fat is 4.3%, carbon and water compounds are 9.65%, and it contains sulfur, phosphorus and other elements, vitamins A, B, C and various hormones. According to the Book of Materia Medica in the Song Dynasty, the "mountain clam" that is "big and yellow like a toad" is probably called a frog. And said that "mountain people also eat it." According to folklore, this frog feeds on ginseng seedlings, and people are precious to frogs, which is also evident. Jilin frog oil is not only a rare delicacy, but also a high-grade tonic.
